Pumpkin Pudding Cups

2 c. pureed pumpkin or winter squash, fresh or canned

1 1/2 c. milk

2 eggs

1/2—3/4 c. honey (depending on how sweet you want it)

1 t. cinnamon

1/2 t. each nutmeg, cloves, ginger

 Beat all ingredients together, making sure there are no lumps of
pumpkin or clumps of spices. Pour into 8 greased mini ramkin cups or
1 greased casserole dish. Bake 350
o 20 min. for mini cups or 45 min.
 for casserole (until a knife inserted near the center comes out clean).
Cool before putting in the refrigerator. Top with whipped cream if you want.

Naomi and her friends would have had pumpkin-like squash and
could have easily made this as a fall treat for their families.
